Stone Fruit Salad

We have some amazing stone fruit at the Co-op right now, and decided to make it the star of a salad! This salad features 5 different kinds of stone fruit, tossed together in a sweet vinaigrette, and topped with goat cheese, almond, and fresh mint.  For this salad we used peach, nectarine, red & black plums, and apricots, but you could use any combination that you prefer.

Ingredients
Peach, sliced

Nectarine, sliced

Red plum, sliced

Black plum, sliced

Canola oil
1 tablespoon
Lemon juice
3 tablespoons
Honey
2 tablespoons
Fresh mint, chopped
1 teaspoon
Goat cheese, crumbled
2 ounces
Almonds, chopped
2 tablespoons

  1. Remove the pitts from all of the fruit, then thinly slice. Place in a large serving bowl.
  2. In a small bowl, whisk the canola oil, lemon juice, and honey.
  3. Toss vinaigrette with the fruit.
  4. Top with crumbled goat cheese and almonds. 
  5. Drizzle with additional honey and garnish with fresh mint.
