Ingredients
Bulk green lentils
1 cup
Field Day coconut oil
1 tablespoon
Yellow onion, chopped

Carrots, diced

Garlic cloves, minced

Fresh ginger, grated
2 teaspoons
Cumin
2 teaspoons
Curry powder
2 teaspoons
Turmeric
1 teaspoon
Coriander
1 teaspoon
Field Day vegetable broth
3 cups
Field Day coconut milk
1 cup
Salt and pepper
To taste
Bulk jasmine brown rice

- Rinse the rice under cold water. Add rice and 2 cups of water to a medium saucepan. Bring to a boil. Once boiling, cover the pot with a slide and reduce the heat to a simmer. Let simmer 35-40 minutes until the water is absorbed. Remove from heat and let rest for 5 minutes.
- Rinse the lentils and let soak for 15 minutes in lukewarm water.
- In a large pot, heat coconut oil over medium heat. Add the onion and saute for 3-4 minutes. Add garlic, ginger, and carrot, and cook for an additional 2 minutes. Stir and reduce heat to low.
- Add all the seasonings, lentils, and vegetable broth. Bring to a boil, and leave it to simmer for 15 minutes.
- Stir in the coconut milk and cook for 10-15 minutes to thicken and slightly reduce until the lentils are tender.
- Adjust seasonings and service with rice. You can also serve with naan, parsley, and yogurt.
