Co+op Basics: Applesauce Muffins

Ingredients
Bulk whole wheat flour
2 cups
Bulk thick rolled oats
2/3 cup + topping
Field Day cinnamon
1 teaspoon
Field Day baking soda
3/4 teaspoon
Field Day baking powder
1 teaspoon

1/2 teaspoon
Field Day applesauce
1 1/3 cup

Vanilla extract
1 teaspoon

Prep time: 10 minutes

Cook time: 20 minutes

  1. Preheat oven to 425 F. 
  2. Spray a muffin pan with cooking spray or use cupcake liners. If using liners, spray the liners.
  3. In a large bowl, whisk together flour, oats, cinnamon, baking soda, baking powder, and salt until combined.
  4. In another bowl, whisk applesauce, eggs, oil, syrup, milk, and vanilla until combined.
  5. Pour wet ingredients into dry ingredients. Stir a few times, then add raisins. Fold everything together gently until just combined.
  6. Spoon batter into the liners, filling them to the top. Top with additional rolled oats. 
  7. Bake for 5 minutes at 425, then reduce the heat to 350 and bake an additional 15 minutes until a toothpick comes out clean.
  8. Allow to cool for 5 minutes.
