Co+op Basics: Tofu BLT

There's nothing better than a BLT, and we've put together a delicious vegan version! Swap the bacon for smoky tofu bacon, and replace the mayo with a protein-packed chickpea aioli, and you won't miss the real thing. Soy boy tofu

Soy sauce
1/2 cup

Prep time: 20 minutes

Cook time: 40 minutes, plus 1 hour to marinate

  1. Press the tofu: wrap the tofu in paper towels, then a hand towel. Place something heavy on top, and let press for at least 20 minutes.
  2. Thinly slice the tofu into strips.
  3. In a bowl, whisk together the soy sauce, tomato paste, maple syrup, and liquid smoke. Pour over the tofu and let marinate 1 hour in the refrigerator.
  4. While the tofu is marinating, make the aioli. Place the chickpeas, garlic cloves, dijon mustard, juiced lemon, and olive oil in a blender and blend until smooth. If needed, add water 1 tablespoon at at time to thin out the aioli and reach the desired consistency.
  5. Preheat oven to 375 degrees F and spray a baking sheet with spray oil or line with parchment paper.
  6. Place the tofu strips on the baking sheet. Brush with additional marinate and make for 20 minutes. Flip the tofu, brush with more marinade, and bake 15-20 minutes more until crispy.
  7. Toast the bread in a toaster or oven.
  8. Assemble the sandwiches: spread a good amount of chickpea aioli on both sides of the bread. Layer with lettuce, tomato, and tofu bacon. Serve & enjoy!
