Roasted Olives & Feta with Baguette

Ingredients
Divina frescatrano olives
1 pouch
Lemon, juiced and zested

Olive oil
4 tablespoons
Garlic
6 cloves
Shallot, sliced

Oregano sprigs
4-5
Red pepper flakes
1/2 teaspoon
Salt and pepper
To taste
Mt. Vikos feta
2 packages
Boulart demi baguette, sliced

Prep time: 5 minutes

Cook time: 30 minutes

  1. Preheat oven to 350 degrees F.
  2. In a medium oven-safe skillet, stir together the olives, olive oil, lemon juice, garlic, shallot, 3 sprigs oregano, chili flakes, salt, and pepper. Roast for 20 minutes, until the olives are hot and the garlic is tender.
  3. Break the feta into the olive mixture. Remove the roasted oregano stems, and sprinkle with the remaining leaves from the new sprigs.
  4. Place back in the oven along with the bread, and bake until the bread is toasted.
  5. Serve with lemon zest.
